Raspberry Eton Mess

Not one to waste egg whites, we always make something else to use them up.  This time it was meringues using only egg whites and sugar and our fancy new KitchenAid which creates a meringue consistency in a flash.

Using frozen raspberries, a staple in our freezer, we made a coulis by combining the raspberries and sugar and stirring over heat until the sugar completely dissolved.  When cooled, we strained the coulis to remove the seeds.

Crumbling the hand made meringues into bite size pieces we layered each glass with meringue, raspberry coulis, double thick cream and topped the dessert with fresh raspberries.
