Red Wine Poached Pears

Kerrie Brewer Canberra Food PhotographerThere were three lovely beurre bosc pears sitting on the window sill. What would you do with them? We decided to turn them into dessert. Simple to make and enjoyable served with ice cream or mascarpone.

In a saucepan combine enough red wine to cover the pears, add sugar to suit your sweet tooth. Stir until sugar is dissolved, then add the spices and vanilla bean. Add peeled pears and simmer over low heat until pears are tender. Turn the pears regularly during the cooking process. Remove pears from liquid and allow to cool completely before serving.

Beurre bosc pears are great to cook with as they hold their shape.
