I made this ice cream after picking up a tray of figs on special at my local markets, using 1 litre of store bought vanilla ice cream, 300g fresh figs, 1/2 cup Hershey caramel sauce and Kahlua, to taste.
Caramelise the chopped figs over a low heat in a saucepan with melted butter and brown sugar until figs are soft. Set aside to cool.
Beat the softened ice cream until smooth, then add the caramel sauce and Kahlua and stir until just combined.
Gently fold the caramelised figs into the ice cream and pour into an airtight container, seal and freeze ice cream overnight.
